Overnight Blueberry French Toast Casserole

A twist to the classic french toast recipe, the overnight blueberry french toast casserole is a make-ahead breakfast dish that can be prepared in a jiffy!

Ingredients
  

  • 12 Bread slices
  • 2 cups Milk
  • 6 Eggs
  • 3 tbsp Sugar optional
  • 1 cup Fresh Blueberries
  • 1/ to 1/2 cup Cream cheese cubed (optional)

Instructions
 

  • Tear the bread into chunks or cut it into 1" x 1" pieces.
  • Lightly grease a baking tray, and lay half the bread pieces in it.
  • Add the cream cheese cubes (optional) and half the blueberries to the tray.
  • Over this, add the remaining bread pieces.
  • Top it with the remaining blueberries.
  • In a separate bowl, mix milk, eggs and sugar to form the batter.
  • Pour the batter into the baking tray.
  • Cover the baking tray with aluminium foil and refrigerate overnight.
  • In the morning, take the tray out of the fridge and bake it covered for 30 minutes at 175 - 180 degree C.
  • Remove the foil and bake uncovered for another 30 minutes.
  • Check if the center is cooked by sticking a toothpick in. If it comes out clean, it is done.
  • Top it with powdered sugar / cinnamon / berry sauce / maple syrup / honey.

Notes

  • For Low-sugar Modifications: Reduce sugar or skip it altogether in the batter and instead use healthier topping alternatives like honey, maple syrup or homemade berry sauce for sweetness.
  • Make it dairy-free: Use dairy-free milk and cream cheese in place of regular milk and cream cheese.
  • Make it gluten-free: Use gluten-free bread instead of regular bread.
